Place a sheet of baking paper on a flat baking tray and lay the first sheet of filo over it (keep the rest of the pastry under a damp tea towel). Brush all over with melted butter and sprinkle over some chopped pecans and cinnamon sugar. Place the next sheet of pastry on top and repeat with all six sheets. 6. Spread the cooled pumpkin mixture along the long top edge of the layered pastry. Fold the edge of the short sides over the mix. Gently lift the baking paper and roll the pastry up lengthways, finishing with the seam underneath. 7. Top with the remaining pecans and bake for 25–30 minutes, or until the pastry is golden. 10. Serve the strudel, with warm brandy anglaise.
